I am trying to preserve everything that I grow in the garden, not letting anything go to waste. So, I thought I would try drying some zucchini. Out of 6 trays of sliced zucchini I filled one quart jar! Wow!

I am trying to preserve everything that I grow in the garden, not letting anything go to waste. So, I thought I would try drying some zucchini. Out of 6 trays of sliced zucchini I filled one quart jar! Wow!

You know, in Arizona, anything you leave out on the counter looks like your zuccini in less than a day. I can buy green bananas at the store and they are yellow by the time I get home. Not kidding. Hey, I could probably make banana chips. Do you put anything on the zuccini or do you just dry them and then eat them like chips. Sounds good. They are expensive at Whole Foods.
